Ingredienti
½ kilo potatoes,400 gr fresh corn cob, 250 gr beans, 100 gr bacon, garlic, parsley, salt/pepper, 1 ham bone or bacon or pork rind.
Preparazione
If you use dry beans, the night before you have to soak them; peel and cut the potatoes into pieces, remove the external leaves and the threads from the corn cob and cut the grains.
If you have the ham bone make it boiling in a big pot with plenty of water; then add the beans, the garlic chopped with salt and pepper and let them boil until the beans are cooked.
Now add the pieces of meat removed from the bone and the corn; when the corn is cooked too, take from the pot the potatoes and smash them with a fork, stir the chopped parsley and give the last boiling. Pour a little oil on every single plate. The soup is more tasteful the following day.
There are many different versions of this soup, here two more recipes:
*Cook all the ingredients together, including minced lard, a slice of bacon, a celery stalk cut into pieces, add a spoon tomato sauce or some cherry tomatoes.
** First cook the beans and the corn with bacon o raw ham bone, then add fried potatoes with oil, garlic and onion and finish cooking with beans and corn cooking water; smash the potatoes and boil it again, almost half an hour, to blend all the savours. Let it rest before serving.
