Tagliolini with scampi and truffles

Tagliolini Scampi

Ingredienti

500 gr scampi, extra virgin olive oil, garlic, bread crumbs, salt/pepper, white wine, truffle, cooking cream, parsley, 300 gr. tagliolini pasta

Preparazione

Use scampi heads to make a tasty gravy for the final sauce.
Peel the tails from their husk. Stir the garlic until brown, remove it and add a spoon of bread crumbs. Add the tails, salt and pepper and brown them lightly; pour the gravy made with the heads, white wine if needed and let them cook for a few minutes. Add some cooking cream and very few chopped parsley and let it cook on low heat until it thickens.
Add in the scampi pan a very thin sliced small truffle;mix your sauce and tagliolini and stir-fry on high heat.
Serve on warm plates. It’s amazing!
